Colorful combinations of vegetables make up this health salad that is quick and easy to make. Perfect served with tacos or at a barbecue, this one is a sure winner.
- 1 15 oz. can black beans, drained and rinsed
- 2 cups frozen corn
- ½ red onion, diced
- ½ red pepper, diced
- 1 small jalapeno, seeded & diced
- 1 mango, diced
- 3 tablespoon cilantro, rough chopped
- 2 tablespoon vegetable oil
- 2 tablespoons lime juice
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ black pepper

Mix all the salad ingredients except the cilantro in a bowl.

In a small bowl whisk together ingredients for the dressing.

When the corn is complete thawed, pour dressing over salad and mix well.

Add cilantro and toss. Serve salad cold.
