- 2 cucumbers, peeled, seeded, and diced
- 1 small onion, diced
- 10 oz. cherub tomatoes, halved
- Dressing
- 3 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon Italian spice
- Salt and pepper to taste

Combine all ingredients in a large mixing bowl.

Combine all ingredients in a small jar and shake well. Store unused portion in the fridge.

Toss with vinaigrette dressing, adding only enough to completely coat. Chill well before serving.
