- 1 can chickpeas drained
- 1 can corn drained
- ½ red onion, chopped
- ¼ cup spinach, chiffonade
- ¼ cup mint. chiffonade
- 2 tablespoons red curry paste
- 1 teaspoon chili garlic paste
- salt and pepper to taste
