Peanut butter and chocolate pretzel bites

Peanut butter and chocolate have long been a favorite of many people. There is just something magical about how the creamy smooth flavor of the peanut butter works with the dark rich taste of chocolate. No-bake Peanut Butter & Chocolate Pretzel Bites also give another favorite, the pretzel, a whole new purpose. Easy to prepare in about thirty minutes, these bite sized treats are perfect for just about any occasion. Could be these little gems would be a welcome gift from the Easter Bunny this weekend!

Ingredients
  • 1 cup creamy peanut butter
  • 2 tablespoon unsalted butter, room temperature
  • 1 cup powdered sugar
  • 3/4 cup brown sugar
  • 1 bag waffle pretzels
  • 1 semi-sweet Bakers Chocolate Bar or chocolate melting chips
Method
  1. Line a baking sheet with parchment and set aside.
  2. Mix together the peanut butter and butter. Add the sugars and mix into a thick dough. Add more powdered sugar if needed. Place peanut butter mixture in the fridge for about 20 minutes to set.
  3. Arrange a single layer of pretzels on the baking sheet. Roll about a 3/4″ size ball of the peanut butter dough between the palms of your hands and place on the pretzels (I used a melon baller to scoop a uniform amount of dough). Cover the dough with another pretzel and lightly press to create a small sandwich.
  4. Place the little sandwiches in the freezer while you prepare the chocolate for dipping. Temper the chocolate either in a double boiler or in the microwave. Dip the pretzel bites half-way into the melted chocolate and return them to the parchment lined sheet to set.
  5. The chocolate will harden in about 20 minutes. Store the treats in a tightly closed container in the fridge for up to a week, however I seriously doubt there is any chance they will be around that long!
Cooks Notes

If your peanut butter dough is too sticky, add more powdered sugar. This recipe makes about 60 pretzel bites.
