Russian Shashlik ~ White BBQ Chicken Kabobs

Chicken thighs marinated in a creamy garlic and herb sauce. Lightly grilled, this chicken is tender and mouthwatering.

Ingredients

  • 2 cups sour cream or plain yogurt
  • 2 Tablespoons lemon juice
  • 1 Tablespoon extra-virgin olive oil
  • 3 cloves garlic minced
  • 2 green onions finely sliced
  • 2 Tablespoon dill finely chopped
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 2 - 3 pounds of boneless skinless chicken thighs or breasts cubed

Method

  1. In a large bowl mix together sour cream, lemon, and oil. Add garlic, onion, and spices. Mix well.
  2. Cut chicken thighs into 1½ cubes.
  3. Combine chicken into sour cream mixture and marinate in the refrigerator for at least four hours, preferably overnight.
  4. Pack chicken cubes onto skewers and grill slowly over medium low heat until golden brown. To avoid tearing chicken from skewers allow each side to sear or brown before attempting to turn
