2cupsall-purpose flour
½cupgranulated white sugar
¼cupbrown sugar
1teaspoonbaking soda
½teaspoonsalt
3very ripe bananasmashed
¼cupplain Greek yogurt
2large eggs
¼cupvegetable oil
1 ½teaspoonsvanilla extract
1teaspoonalmond extract
½cupmini chocolate chips
½cupwalnuts or pecanschopped
Method
Place rack in center of oven and heat to 350°F. Line a 9” loaf pan with parchment paper allowing the paper to hang over the sides of the pan. Grease pan and paper.
In a large bowl mix together flour, sugars, soda, and salt. Add chips and nuts and mix to coat.
In a separate bowl mix together bananas, yogurt, eggs, oil and extracts.
Mix wet ingredients into dry stirring only enough to combine. Over working the dough will make the bread tough.
Pour into prepared bread pan and bake for 50 to 60 minutes or until a knife inserted in the center comes out clean.
Remove bread from pan by lifting the parchment paper and place loaf on a wire rack. Cool completely before slicing.
