115 oz. canblack beans,drained and rinsed
2cupsfrozen corn
½red onion,diced
½red pepper,diced
1small jalapeno,seeded & diced
1mango,diced
3tablespooncilantro,rough chopped
Dressing
2tablespoonvegetable oil
2tablespoonslime juice
½teaspoonchili powder
½teaspoongarlic powder
½teaspoononion powder
½teaspoonsalt
½black pepper
Method
Salad
Mix all the salad ingredients except the cilantro in a bowl.
Dressing
In a small bowl whisk together ingredients for the dressing.
Assemble
When the corn is complete thawed, pour dressing over salad and mix well.
