Thai Peanut Dipping Sauce
Smooth and creamy peanut sauce with a hint of lime and heat.

Ingredients

cup
dry roasted unsalted peanuts

cup
water

cloves
garlic
minced
1/2
tsp
dark soy sauce

tsp
sesame oil
1 - 2
Tablespoons
brown sugar
to taste
2 – 2 ½
Tablespoons
fish sauce
vegetarian substitute 2 ½ to 3 Tablespoons soy sauce
1/2
teaspoon
tamarind paste or 2 Tablespoons lime juice
1/2
teaspoon
cayenne pepper or 1 teaspoon Sriracha sauce
(adjust to taste)
1/3
cup
coconut milk.
Method
Place all ingredients in a food processor.
Process until sauce is smooth.
If you prefer a thinner peanut sauce, add a little more coconut milk.
Hold in the fridge for up to two weeks.
