Salad
1 15 ozcan garbanzo beansrinsed and drained
1 15 ozcan cannellini beansrinsed and drained
1 15 ozcan kidney beansrinsed and drained
1 15 ozcan black beansrinsed and drained
2stalks of celery diced
½red oniondiced
½cuporange or red pepper (or both)diced
1 - 2 jalapenoseeded and finely diced (optional)
½cupfresh cilantrorough chopped
Dressing
1/3cupapple cider vinegar
1/3cupgranulated sugar
1/4cupolive oil
1 1/2teaspoonssalt
1/4teaspoonblack pepper
Method
Drain and rinse the canned beans
In a large bowl mix together the beans, celery, onion, pepper and cilantro.
In a separate small bowl, whisk together the vinegar, sugar, olive oil, salt, and pepper.
Add the dressing to the beans. Toss to coat.
Chill salad in the refrigerator for several hours to allow the beans to absorb the flavor of the dressing. Serve cold.
