Ingredients
Salad
  • 1 15 oz. can black beans, drained and rinsed
  • 2 cups frozen corn
  • ½ red onion, diced
  • ½ red pepper, diced
  • 1 small jalapeno, seeded & diced
  • 1 mango, diced
  • 3 tablespoon cilantro, rough chopped
Dressing
  • 2 tablespoon vegetable oil
  • 2 tablespoons lime juice
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ black pepper
Method
Salad
  1. Mix all the salad ingredients except the cilantro in a bowl.
Dressing
  1. In a small bowl whisk together ingredients for the dressing.
Assemble
  1. When the corn is complete thawed, pour dressing over salad and mix well.
  2. Add cilantro and toss. Serve salad cold.
