Basic Pie Crust

Ingredients
Single crust
  • cups sifted all-purpose flour
  • ½ teaspoon salt
  • ½ cup shortening
  • 4 - 5 Tablespoons cold water
Double crust or lattice-top
  • 2 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 2/3 cup shortening
  • 5 - 7 Tablespoons cold water
Method
  1. Sift together flour and salt.
  2. Cut in shortening until pieces are size of small peas.
  3. Sprinkle water over 1 tablespoon at a time, tossing mixture after each addition.
  4. Form into ball. Will look crumbly but hold together when pressed.
  5. Flatten on lightly floured surface.
  6. Roll 1/8 inch think from center to edge.
