<p style="text-align: justify;">This pancake is made by combining leftover mashed potatoes with shredded raw ones. Many recipes are based primarily on the mashed potatoes, while others use more of the shredded raw potatoes instead. But for the best results, and the smoothest of textures, for a dish that does not fall apart in the pan, the recommendation is to use an equal mixture of raw and cooked potato.</p>

Prepare a shallow 9”x9” baking dish with cooking spray.</div></li><li id="wprm-recipe-6821-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Heat 1 tablespoon of olive oil in a large skillet over medium heat, add the onions and sauté until translucent. Add the garlic and cook for another minute. Spread the onion mixture on the bottom of the greased baking dish.</div></li><li id="wprm-recipe-6821-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Slice the potatoes, zucchini, squash and tomatoes in 1/4 inch thick slices. Alternate the wheels of vegetables in a single layer on top of the onions, fitting them in tightly in to the baking dish.</div></li><li id="wprm-recipe-6821-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Season with sea salt, black pepper and dried thyme. Drizzle 1 tablespoon of olive oil over the top.</div></li><li id="wprm-recipe-6821-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Cover the dish with foil and bake for about 45 minutes, or until the potatoes are tender. Uncover and sprinkle the Parmesan cheese on top and bake for another 25-30 minutes or until browned.</div></li></ul></div></div>

Served with marinara they are Italian, <a href="https://jamesandeverett.com/2015/12/11/tzatziki-sauce/" target="_blank" rel="noopener">tzatziki sauce</a> creates a Mediterranean dish, and for a taste of Morocco try them with harisa. Top the fritters with a curry sauce for a trip to India or spicy salsa for a south of the border treat. A dollop of <a href="https://jamesandeverett.com/2015/12/10/aioli/" target="_blank" rel="noopener">aioli</a> makes these golden pancakes a true Southern treat. One of my personal favorites is ajvare, an eastern European spicy eggplant and pepper sauce. So what ever direction you want your meal to take, this fritter will certainly help you get there.</p>

Add salt and mix well. <i>(The salt will help to remove the water out of the squash)</i>. Place squash in a mesh strainer and allow to drain for a half an hour.</div></li><li id="wprm-recipe-5948-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Using a ricer squeeze all the remaining liquid out of the squash and return to mixing bowl, it is important to get as much moisture out of the squash as possible <i>(you can also use the back of a spoon against the mesh strainer to remove liquid).</i></div></li><li id="wprm-recipe-5948-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add flour, egg, and green onion.
