There are multiple variables that contribute to our vision of the perfect cookie, thick or thin, chewy or crisp, large or small, milk chocolate or dark chips, nuts or no nuts, so many factors. For many of us the reason for our personal favorite is often simply childhood memories of our Mothers or Grandmothers baking.

All recipes for chocolate chip cookies seem to start with the same basic ingredients, flour, salt, baking soda, butter, sugar, eggs, vanilla, chips, and sometimes nuts. It is the amount of each ingredient that is added, and the method of preparation that make the difference. I like a cookie that is soft and chewy, yet has just a bit of crisp at the edge. A cookie that has a buttery rich caramel flavor with just a hint of vanilla, and a delicate balance of bitter and sweet chocolate. So after researching countless recipes, and baking dozens of test cookies using different ratios of ingredients and methods of preparation, I have unlocked the secret to what I feel is the best old-fashioned style chocolate chip cookie ever. Sorry Mom.

Rich and chewy, the non-chocolate cousin of the brownie, and this one is king of them all, introducing the Ultimate Blondie. Brown sugar, pineapple, coconut flakes, butterscotch pieces, white chocolate chips, and pecans create the perfect harmony of flavors in this upgraded take on a classic treat. This version is formulated from several of my favorite recipes, combining all the things I like best about each. I also wanted my dessert to be a bit taller than others, so I “raised the bar” so to speak. If you are looking for a decadent holiday cookie, these blondie’s are not only good, they are Rockin’ Good. I have to think if the three wise men could have gotten their hands on these golden bars of joy, they would have probably reconsidered their choice of gifts! And speaking of The Three Kings and a Rockin’ Blondie………………..

For some reason the blondie’s were begging me for some holiday plaid. So I tempered a small amount of white chocolate and butterscotch to pipe them their very own tartan.

I was just thinking for next time, how about a white chocolate & Baileys Irish Cream ganache on top? Hmmmmm. Hope you have a rockin’ good time making these delicious treats! Enjoy!

Fresh baked cinnamon rolls are certainly one of my favorites, and I am quite sure there are many people who share my sentiment. There is something almost magical about the way cinnamon fills our senses. For me, the aroma of a pan of rolls in the oven seems to fill the house with a goodness that brings back wonderful memories of snowy wintry days.

A while back I came across a recipe for a cookie that touted the look and taste of a cinnamon roll, and have been anxious to try them ever since. So when I woke up to three inches of snow a few days ago, I decided that it was the perfect day to give them a go, and see if they would live up to my expectations. I was pleasantly surprised how good they were, and how much they did remind me of a fresh-baked cinnamon roll. I will definitely be adding them to my holiday cookie repertoire this year.

Yesterday was a grey and snowy day, the kind of day that make you want to stay in your pajamas and make a second pot of coffee day, the perfect kind of day for baking. For me nothing makes the house cozier than the warmth and aroma of something in the oven. A cookie came to mind. One that was sweet, but not too sweet, something decadent but not too sinful. A shortbread with a kiss of chocolate seemed to be the perfect answer.
