Beat in the vanilla.</div></li><li id="wprm-recipe-6531-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Whisk together the egg whites and milk by hand in a medium mixing bowl until just combined.</div></li><li id="wprm-recipe-6531-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Reduce the mixer speed to low and beat in one-quarter of the flour mixture, then one-third of the milk mixture, stopping and scraping down the bowl and beater after each addition.</div></li><li id="wprm-recipe-6531-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Beat in another quarter of the flour, then another third of the milk mixture. Scrape again. Repeat with another quarter of the flour and the remaining milk mixture; scrape. Finally, beat in the remaining flour mixture.</div></li><li id="wprm-recipe-6531-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Pour the batter into two mixing bowl dividing it evenly.</div></li><li id="wprm-recipe-6531-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add 6 – 8 drops of <a href="http://www.lorannoils.com/peppermint-oil-natural-1-oz-0070-0500" target="_blank">peppermint oi</a>l to one half, and 5 – 6 drops of <a href="https://www.globalsugarart.com/fondant-edibles/colorings/gels-pastes-sprays-powders/gel-food-colors.html" target="_blank">red gel paste</a> to the other.</div></li><li id="wprm-recipe-6531-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Using a quarter cup scoop for each half of the batter, place a scoop of the white batter in the center of each pan. Drop a scoop of the red into the center of the white batter. Alternate between the two colors dropping the batter into the center of the last color until all the batter is gone. Don’t worry if it is not exact. Lightly tap the pans on the counter to help the batter even out.</div></li><li id="wprm-recipe-6531-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Bake the layers for about 30 to 35 minutes, until they are well risen and firm and a toothpick inserted in the center emerges clean.</div></li><li id="wprm-recipe-6531-step-0-10" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Cool the layers in the pans on racks for 5 minutes, then turn out onto racks to completely cool.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Ganache Frosting</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-6531-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place chocolate pieces in a mixing bowl.</div></li><li id="wprm-recipe-6531-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Heat the cream in a sauce pan until it just begins to boil. Pour hot cream over chocolate and slowly mix <i>(the heat from the cream will melt the chocolate)</i>. When the mixture becomes smooth and creamy add the butter and mix well.</div></li><li id="wprm-recipe-6531-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Set aside and allow to cool to room temperature.</div></li><li id="wprm-recipe-6531-step-1-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">When the chocolate mixture is room temperature place it in the bowl of a stand mixer fitted with a whisk attachment. On low-speed add the confectioners’ sugar a little at a time. Add the meringue powder. Increase the speed of the mixer to high, and whip for 5 to 8 minutes, or until stiff peaks form <i>(Frosting will double in volume and take on a silky appearance).</i></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Assemble</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-6531-step-2-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Level the tops of the cakes if needed with a sharp knife by slicing off the “hump” in the center if need be. Spread a layer of frosting on top of both layers.</span></div></li><li id="wprm-recipe-6531-step-2-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Put a small dab of frosting on the center of your cake circle or plate (this will prevent sliding) and place the first layer over it. Turn the second layer over and place it frosting side down on top of the first to create a sandwich. Using a gentle twisting motion shift the top layer to make sure the two are evenly stacked and the top of the cake is level.</div></li><li id="wprm-recipe-6531-step-2-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Cover the top of the cake with a layer of frosting.</span></div></li><li id="wprm-recipe-6531-step-2-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Frost the sides of the cake. Once the entire cake is covered with an even layer, use the tip of your knife add peaks and swirls <i>(Remember ganache frosting is chocolate and dries with a thin hard shell, so make sure to work in all the swirls you want before it sets, do not try to go back into the frosting with your knife once it is set up).</i></div></li><li id="wprm-recipe-6531-step-2-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Dust the top with some crushed candy canes. Arrange some canes to create a topper for your cake. Dust with <a href="https://www.ckproducts.com/gumpaste-dusting-powders-disco-glitter-pixie-dust-disco-glitter-43-1885" target="_blank">CK Disco Dust or Edible Glitter</a> for some added magic.</div></li></ul></div></div>

Heat while stirring over medium-low until the chocolate and butter are melted. Heat this mixture only long enough to completely melt the chocolate and butter. Do not boil, we are not melting sugar and making candy, the sauce should appear granular.</div></li><li id="wprm-recipe-6540-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Remove from heat and cool (since we are going to be adding egg to this mixture, it is extremely important to allow the sauce to cool down somewhat. Scrambled eggs would not be a good thing here).</div></li><li id="wprm-recipe-6540-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">In a small bowl combine flour, baking powder, baking soda, and salt; set aside.</div></li><li id="wprm-recipe-6540-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Tip: When baking, mix your dry ingredients flour, baking powder, soda, salt, powdered spices together with a whisk in a separate bowl. This accomplishes two things, one it combines the ingredients without overworking the batter, and it sifts the flour.</div></li><li id="wprm-recipe-6540-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Stir yogurt, eggs, and vinegar into chocolate mixture in saucepan. Gradually add flour mixture, stirring just until combined (Vinegar is added to assist the leavening ingredients in this very heavy cake, but will add no taste. Do not be surprised to see the batter bubble, it is the vinegar doing its job).</div></li><li id="wprm-recipe-6540-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Fold in the white baking chips and pour into the prepared pan.</div></li><li id="wprm-recipe-6540-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Bake for 50 to 60 minutes or until a toothpick inserted near the center comes out clean. (Because this is such a dense cake be sure to test the cake in several places. I like to use a wooden skewer instead of a tooth pick to make sure the cake is done all the way through).</div></li><li id="wprm-recipe-6540-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Cool in pan on a wire rack for 15 minutes. Remove from pan. (Do not boil). Pour the hot cream into the bowl of chips and mix until all of the chocolate is melted and becomes smooth (the residual heat from the cream will melt the chocolate).</div></li><li id="wprm-recipe-6540-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Finish the ganache by stirring in the Kahlua.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Assemble</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-6540-step-2-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Pour the ganache over the cooled cake while the chocolate is still warm. It will flow easily and become smooth.  As the chocolate cools it will set up and will keep its shiny appearance.</div></li><li id="wprm-recipe-6540-step-2-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">I finished this cake with some white, light, and milk chocolate that I drizzled over the cake after the ganache had set up. I <a href="https://jamesandeverett.com/2011/01/31/tempering-chocolate/" target="_blank">tempered the chocolates</a> one at a time and used a small plastic bag with the corner cut off to pipe on the finishing touches.</div></li></ul></div></div>

Rum is also commonly added instead of Kahlua. This is totally a preference, and most certainly can be omitted. However if you are adding liquor, be sure to do so after the chocolate is completely melted and incorporated into the cream.</span><div class="wprm-spacer"></div>
<span style="display: block;">Ganache is easy to make and delicious, and can be used in many ways. One way is as a warm sauce-like glaze as described here. Another application is to allow the ganache to complete cool (room temp not refrigerated), and then whisk it into a spreadable frosting. Thicker versions are commonly used for fillings in pastries and truffles, or thinned as a sauce.</span></div></div>

Presented on a stick as a lollipop, or served as a truffle, these little gems are certain to be a hit.</p>

<p style="text-align: justify;"><strong>To prepare Cake Pops:</strong></p>
<p style="text-align: justify;"><em>Cooks Note: Making the cake pops is more of a technique rather than a recipe. Here are some guidelines that will help you. Decorate them as simple or lavish as you wish.</em></p>
<ul>
<li>1 box cake mix, (your choice)</li>
<li>1 can of frosting (your choice)</li>
<li><a href="http://www.wilton.com/store/site/product.cfm?sku=pg_candymelts" target="_blank" rel="noopener">Wilton candy melts</a> (again your choice)</li>
</ul>
<p style="text-align: justify;">Begin by baking a cake, either from a box or scratch. <em>(I might suggest a box cake mix, since the process of forming the balls, dipping them, and then decorating maybe about all you want to attempt). </em>Allow the cake to completely cool. Using your hands, crumble the cake into the bowl of a mixer.</p>
<p style="text-align: justify;">Add about 2/3 of a can of frosting. (Again feel free to make your own if your up to it) and mix into a dough like consistency.</p>

<p style="text-align: justify;">For this batch I used a white cake mix and divided it between 2 eight inch round pans. I added chocolate frosting to one cake and cherry to the other to add some variety.</p>

<p style="text-align: justify;">Use a cookie dough scoop or tablespoon to create even sized balls of the cake and frosting mixture. Roll between the palms of your hands to shape. Place the balls on a wax paper covered baking sheet and stand them in the freezer for about 15 minutes. Move them to the refrigerator to keep them cold. You do not want to freeze the cake pops, only completely chill them.</p>

<p style="text-align: justify;"><a href="https://jamesandeverett.com/2011/01/31/tempering-chocolate/" target="_blank" rel="noopener">Temper the candy melts in the microwave</a>.<em>  </em>Drop the balls one at a time into the melted chocolate and carefully turn to completely coat. Remove the balls with a dipping fork and place them on wax paper. Allow the chocolate to completely harden. <em>(If you are going to decorate the cake pops with sprinkles, do so as you remove them from the melted chocolate. This will allow the sprinkles to adhere).</em></p>

<p style="text-align: left;">I still remember the anticipation I experienced as a young boy, waiting for Sunday evening to come around. Because Sunday evening you see meant it was time for Mutual of Omaha&#8217;s Wild Kingdom. With my guide Marlin Perkins, and his assistant Jim, I could leave the confines of our Nebraska farm-house, and travel the world to exotic locations in search of seldom, or perhaps never before seen creatures. What a thrill it was to watch from the safety of the canoe while Jim wrestled the giant anaconda.</p>

<p style="text-align: left;">It was on a recent recipe excursion of my own, searching for something different to prepare, something not seen before (in my kitchen anyway), that I happened upon a recipe that took me back to that canoe.  Zebra cake, how wonderfully exotic. Immediately I knew it was time to put on my pith helmet, get out the camera, and fire up the oven.</p>

Prepare a 9″ x 2″ cake pan with a light coating of cooking spray (for a slightly thicker cake use an 8″ x 2″ pan). Place a circle of parchment paper in the bottom of the pan and spray again.</div></li><li id="wprm-recipe-6570-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Blend the sugar and eggs using a mixer until lightened, about 2 minutes. Mix in the oil, milk and vanilla until well combined and smooth.</div></li><li id="wprm-recipe-6570-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">In a separate bowl, sift together the flour, baking powder and salt.  Add the dry mixture to the liquid ingredients a third at a time. Mix on medium speed 1-2 minutes or until the batter is smooth and lump free. Be sure to scrape down the bowl halfway through mixing.</div></li><li id="wprm-recipe-6570-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Remove 2 cups of the vanilla batter and place in a separate bowl. Sift the cocoa powder over the batter, mixing well to combine.</div></li><li id="wprm-recipe-6570-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">To create the zebra effect, Spoon about 3 tablespoons of vanilla batter into the center of the cake pan. Next, spoon 3 tablespoons of the chocolate batter into the center of the vanilla batter. (I use two small measuring cups of the same size) This causes the vanilla batter to spread out. Continue to alternate batters, in bulls-eye fashion until all batter is used. You will now have thin rings of each batter on the outer edges of the pan, thicker rings towards the center.</div></li><li id="wprm-recipe-6570-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Bake the cake on the center rack of the preheated oven for 35-45 minutes, or until the cake is lightly brown and a toothpick inserted into the center of the cake comes out clean. Cool the cake in the pan for 10 minutes, and then turn out onto a wire rack to finish cooling.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Icing</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-6570-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Sift together the powdered sugar and cocoa. Add a small amount of the Hershey’s syrup and mix. Add more of the syrup as needed, (mix well each time you add), until the mixture becomes smooth and has a “flow-able” consistency. (Whisking for about 1 minute will bring a shine to the icing)</div></li><li id="wprm-recipe-6570-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Serve</div></li><li id="wprm-recipe-6570-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">A fresh brewed cup of coffee is the perfect companion for this striped wonder.</div></li></ul></div></div>
