A combination of flavors that is undeniably hard to beat is chocolate and peanut butter, and this cake definitely brings the two favorites together to create one stunning treat. Moist chocolate cake is covered with a creamy rich peanut butter frosting and layered with chopped Reese’s peanut butter cups, then topped with a dark chocolate gananche. A sweet tooth’s dream come true.

I finally broke down and treated myself to some 6″ x 3″ cake pans. I had been wanting some for a while, and I guess I just needed a good excuse. If you have not tried Fat Daddio’s bakeware, I strongly recommend it! High quality and very reasonable prices.

Any cake whether it is made from scratch or from a box, can be baked in any size pan, assuming you have enough batter. Below is a chart I have assembled that lists some common pan sizes, the amount of batter you need to fill them, the recommended baking temperature and time. I find it rather handy. There is a link below the chart if you would like to print it out for future reference.

One of the latest crazes sweeping the cake decorating world is the cake pop. These small nuggets of goodness seem to be all the rage, making cupcakes “so last year”. Simply decorated with sprinkles, or turned into beautiful flowers, these delights are both fun and delicious. Presented on a stick as a lollipop, or served as a truffle, these little gems are certain to be a hit.

To prepare Cake Pops:

Cooks Note: Making the cake pops is more of a technique rather than a recipe. Here are some guidelines that will help you. Decorate them as simple or lavish as you wish.

1 box cake mix, (your choice)

1 can of frosting (your choice)

Wilton candy melts (again your choice)

Begin by baking a cake, either from a box or scratch. (I might suggest a box cake mix, since the process of forming the balls, dipping them, and then decorating maybe about all you want to attempt). Allow the cake to completely cool. Using your hands, crumble the cake into the bowl of a mixer.

Add about 2/3 of a can of frosting. (Again feel free to make your own if your up to it) and mix into a dough like consistency.

For this batch I used a white cake mix and divided it between 2 eight inch round pans. I added chocolate frosting to one cake and cherry to the other to add some variety.

Use a cookie dough scoop or tablespoon to create even sized balls of the cake and frosting mixture. Roll between the palms of your hands to shape. Place the balls on a wax paper covered baking sheet and stand them in the freezer for about 15 minutes. Move them to the refrigerator to keep them cold. You do not want to freeze the cake pops, only completely chill them.

I still remember the anticipation I experienced as a young boy, waiting for Sunday evening to come around. Because Sunday evening you see meant it was time for Mutual of Omaha’s Wild Kingdom. With my guide Marlin Perkins, and his assistant Jim, I could leave the confines of our Nebraska farm-house, and travel the world to exotic locations in search of seldom, or perhaps never before seen creatures. What a thrill it was to watch from the safety of the canoe while Jim wrestled the giant anaconda.

It was on a recent recipe excursion of my own, searching for something different to prepare, something not seen before (in my kitchen anyway), that I happened upon a recipe that took me back to that canoe. Zebra cake, how wonderfully exotic. Immediately I knew it was time to put on my pith helmet, get out the camera, and fire up the oven.

Peanut butter and chocolate, or is it chocolate and peanut butter, either way, these two flavors are a perfect fit. I don’t know if it was an accident, or a well planned creation, but this duo of decadent delights has become a favorite of many.

Probably the best known example of this flavor combination is the Reese’s peanut putter cup. In 1928 H.B.Reese, a former dairy farmer turned shipping foreman for Milton S. Hershey, created the candy in the basement of his home in Hershey, Pennsylvania. The unique candy bar became an almost overnight success. The chocolate marvels were manufactured and sold by the H.B.Reese Candy Co. until Reese’s death in 1956. The Hershey company purchased the rights to the popular treat for the tidy sum of $23.5 million dollars in 1963.
