<p style="text-align: justify;">To me nothing says love in the kitchen as much as the aroma of fresh baked bread. The smell of the bread in the oven makes a house feel like a home. And the flavor of a slice of bread warm enough to melt butter…………Oh my.</p>

<p style="text-align: justify;">A bakery uses a controlled environment to rise and bake their products. In the home there are a few more challenges, but none that can not be overcome. I think a lot of people are afraid of bread, people I know who can bake wonderful cakes and cookies are terrified at the thought of making bread. It really is not all that difficult, requiring more time than effort. With some practice you will get the feel of the dough, and you will be able to produce a consistent product. Understanding the basics is important. French bread is a great way give it a try. There are very few ingredients, and it will help you to develop the skill of making bread.</p>
<p style="text-align: justify;">So don’t be afraid to try, I still produce something that could be used as “doorstop” from time to time, but I always learn something about the process. The rewards of turning out a beautiful loaf of bread are amazing, and at your next dinner party when someone asks where you got the marvelous bread, you can glow with delight as you reply, “Oh, I made it”.</p>

Stir and let stand for about 5 minutes to bloom the yeast.</div></li><li id="wprm-recipe-5957-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Sift together 2 cups of flour with the salt. Add to the yeast and combine.  Mix to a smooth consistency.</div></li><li id="wprm-recipe-5957-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Cover with plastic wrap and set bowl in a warm place away from any drafts for 30 minutes. The starter will develop gas bubbles and more than double in size during this process.</div></li><li id="wprm-recipe-5957-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Sift the other four cups of flour and hold aside.</div></li><li id="wprm-recipe-5957-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add small amounts of the sifted flour to the starter until a soft dough is formed. The dough will be sticky</div></li><li id="wprm-recipe-5957-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Turn out on to a heavily floured surface. Begin to knead the dough adding a cup of flour at a time until the dough no longer sticks to the board.</div></li><li id="wprm-recipe-5957-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Depending on humidity and temperature, you may use more or less flour than called for. Knead dough for about 10 minutes working in flour as you go. You want to end up with a ball of dough that is elastic and no longer sticks to your hands or the surface.</div></li><li id="wprm-recipe-5957-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Spray a large bowl with cooking spray. Place the ball of dough in the bottom and turn once to coat lightly with the oil. Put the dough in a warm, draft free place to rise (72° F to 80° F). Cover with plastic wrap. Allow to dough to double in size, usually about 2 to 2½ hours depending on temperature.</div></li><li id="wprm-recipe-5957-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Punch down the dough to force out air bubbles.</div></li><li id="wprm-recipe-5957-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Remove the dough and place on a lightly floured surface. Knead the dough a few times.  Divide the dough in half to form two loaves of bread. Form the dough into two balls, cover with a towel, and allow to relax for 10 minutes</div></li><li id="wprm-recipe-5957-step-0-10" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Working with one half at a time, roll the dough out into a rectangle about 14″ x 9″ or about one half-inch thick.</div></li><li id="wprm-recipe-5957-step-0-11" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Starting along the long edge roll the dough into a log.</div></li><li id="wprm-recipe-5957-step-0-12" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Pinch the seam together to close.</div></li><li id="wprm-recipe-5957-step-0-13" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Fold the end in and pinch the edges to seal.</div></li><li id="wprm-recipe-5957-step-0-14" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place the formed loaves on a parchment cover baking sheet. (You can dust the baking sheet with corn meal if you prefer). With a sharp knife make three diagonal cuts about one half inch deep.</div></li><li id="wprm-recipe-5957-step-0-15" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place the loaves in a warm, draft free place and cover plastic wrap to prevent a skin from forming.</div></li><li id="wprm-recipe-5957-step-0-16" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Allow bread to double in size, about 45 minutes to 1 hour. (Rising times vary widely because of temperatures and humidity, so best thing is to watch for the size of the loaves more than the clock).</div></li><li id="wprm-recipe-5957-step-0-17" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">While the dough is in its final rise, move racks to center of oven and heat to 425º F.</div></li><li id="wprm-recipe-5957-step-0-18" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place the bread in the oven. Using a spray bottle of water, spritz the door before you close it. (Steam combined with the blast of heat gives the bread its color and crisp crust).</div></li><li id="wprm-recipe-5957-step-0-19" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Bake for 25 – 30 minutes or until golden brown.</div></li><li id="wprm-recipe-5957-step-0-20" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Remove the bread from the oven and place on wire racks to cool. If the bread is properly baked it will sound hallow when you knock on the bottom.</div></li><li id="wprm-recipe-5957-step-0-21" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Resist temptation, and allow the bread to finish developing for about ten minutes before cutting into it. It will still be warm enough to melt butter and make everyone happy.</div></li></ul></div></div>

<p style="text-align: left;">Italian for “baked earth”, Terracotta has been around for a long time. It was the only clay produced by Western and pre-Columbian people until the 14th century when European higher fired stoneware began production. Terracotta has been used throughout history for sculpture and pottery, as well as bricks and roof shingles. In ancient times, the first clay sculptures were dried or “baked” in the sun after being formed. Later they were placed in the ashes of open hearths to harden, and finally kilns were used, similar to those used for pottery today.<span id="more-715"></span></p>
<p style="text-align: left;">One of the most famous examples of the use of “baked clay” for sculpture would have to be the Terracotta Warriors and Horses of Xian. This collection of sculptures depicting the armies of Qin Shi Huang, the first Emperor of China were discovered in 1974 by local farmers digging a well. The figures dating from the 3rd century BC include warriors, chariots and horses. <p><strong>To season your pots:</strong></p>
<p style="text-align: left;"><em><strong>Cooks Note:</strong> Seasoning the terracotta for first time use requires some preparation. I would recommend that you do this as a separate project from baking bread. Once the pots are seasoned you need only to oil before use.</em></p>
<p style="text-align: left;">Only use new pots. Thoroughly scrub with warm soapy water using a Dobie or 3M pad (t<em>his will help remove any small burrs)</em>.  Rinse well. Completely submerge the pots in water and soak them for several hours. Allow them to dry overnight.</p>
<p style="text-align: left;">Heat your oven to 350° F. Stand the pots on a baking sheet. Using a paper towel, apply a liberal coat of shortening to the inside. Be sure to do the bottom and the rim as well. Place in the oven for about 20 minutes. Remove from the oven and repeat. Apply more shortening to the hot pots, being careful not to burn your hands <em>(I used tongs to hold the pot while I apply the shortening)</em>. Place the pots back in the oven for another 15 minutes. Repeat this process until the pots will absorb no more oil. It is amazing how much the new pots will absorb, so don’t be surprised if you have to repeat the process five or six times.</p>
<p style="text-align: left;">Your pots are now ready for bread, and can be used over and over. The more you use them, the better they work.</p>

<p style="text-align: justify;"><strong>To bake bread in terracotta pots:</strong></p>
<p style="text-align: left;"><em><strong>Cooks note:</strong> You can use any bread recipe you like, or a <a href="https://jamesandeverett.com/2012/07/18/french-bread/" target="_blank" rel="noopener">basic French bread </a>works extremely well.</em></p>
<p style="text-align: left;">Liberally grease the insides and the rims of the pots with shortening. If the pot has a hole in the bottom cut a circle out of parchment paper and place inside the greased pot. Spray the paper again with cooking oil.</p>
<p style="text-align: left;">Use any bread recipe you like following the directions. After your first rise, punch down the dough and form into a ball and drop into the pots. The dough should fill the pots just slightly over half. Cover and allow dough to rise again<em> (terracotta helps dough to rise, it also seems to speed up the process).</em></p>
<p style="text-align: left;">Stand the pots on a baking sheet and place in the oven at 375° F for about 20 minutes <em>(baking time will vary depending on size of pots)</em>. When the bread has a golden crust, remove from the oven and stand on a wire rack for about 5 minutes before turning bread out of the pots.</p>
<p style="text-align: left;">You can also bake bread in your grill using an indirect method. Heat one half of the grill on high. Place the pots over the half with no heat and close the lid. Grill for about 15 – 20 minutes.</p>
<p style="text-align: left;">Clean the pots using only warm water.</p>
