I just tried this with all ground pork (didn't have beef readily on hand). I think the waiting really does make the flavors shine through. I gave it a little under two hours to chill, though I wanted more, but I was hungry. I used a microplane for the garlic and chopped the onion as fine as I could. It's delicious and great for naan or pita with a little tzatziki and veggies. (I ate them with red onions, tomatoes, and bell peppers.) I can't wait to break out the grill and do a bunch of these for the summer.
