I am glad you like the recipe, it is delicious. I have never prepared this a day ahead. I would think it would be fine, just make sure your fish is completely thawed if using frozen. Let me know if you try it, I will be interested to hear how it works for you. Thanks for sharing!

Kathryn
I am pleased that you gave this dish a try. Haddock sounds like a nice choice. I have not had the issue of excess moisture but have never held them long or used something other than cod. Sounds like your fish might have been a little wet, perhaps allowing the fish to sit on a paper towel for a while before rolling might help? I hope you will try this one again and thanks for your comment.

This is a dish that requires some practice. It is definitely important to get the potatoes super thin. I let the prepared packets sit in the fridge more than an hour and I think the potatoes and fish created some juice that was not necessarily helpful to a successful cooking experience. I would definitely NOT do this for company until I had mastered the techniques. Delicious anyway. I used haddock.
