I made these and they turned out so good! The potatoes were so small that they broke apart somewhat easily while trying to scoop them out but even though they were messy they tasted great. Will make again for sure. Also, had some leftover potato salad filling so scooped up the rest with some ritz crackers..delicious!

I roasted a few but being so small they seemed a bit dry to me.
